How to create value for\/by users through charitable circuits and food banks?<\/strong><\/p>\n<hr \/>\n<p><strong>Comment valoriser les invendus tout au long de la chaine alimentaire? Comment cr\u00e9er de la valeur par et pour les utilisateurs en plus de la valorisation \u00e0 travers les circuits caritatifs et les banques alimentaire?<\/strong><\/p>\n<p>La Transformation des invendus fruits et l\u00e9gumes propose des ateliers de cuisine collective pour la r\u00e9alisation de conserves.<\/p>\n<p>Tout au long de l&#8217;ann\u00e9e et en particulier \u00e0 la belle saison sont organis\u00e9es des ateliers de transformation des invendus provenant des circuits de distribution (march\u00e9s et supermarch\u00e9s) ainsi que de producteurs locaux (fermes locales, jardins collectifs et individuels). Les ateliers fonctionnent comme des \u00e9v\u00e9nements \u00e0 la mani\u00e8re de f\u00eates ou de ventes exceptionnelles. Ils sont dirig\u00e9s par un cuisinier professionnel dans une cuisine industrielle libre (soir, weekend). Les participants \u00e0 l&#8217;atelier apprennent en assurant les op\u00e9rations de transformation des l\u00e9gumes et des fruits. Ils vendent aux visiteurs invit\u00e9s une partie de leurs produits pour couvrir les frais.<\/p>\n<p>Le b\u00e9n\u00e9fice des Ateliers de Transformation des Invendus r\u00e9side \u00e0 la fois dans la valorisation des produits alimentaires p\u00e9rissables invendus sous la forme de circuits courts de transformation-vente et dans la cr\u00e9ation d&#8217;activit\u00e9 pour les organisateurs.<\/p>\n<p>Plusieurs projets ont vu le jour dans ce sens. Par exemple, le projet ABC &#8211; E qui vise la cr\u00e9ation de Tr\u00e8s Petites Entreprises (TPE) de fabrication artisanale de\u00a0 produits transform\u00e9s (confitures, jus\u2026) \u00e0 partir des invendus de la Banque Alimentaire de Bordeaux\u00a0 et de Gironde (BABG). Les TPE\u00a0 mutualiseraient un atelier de transformation et une marque commerciale. L\u2019objectif est de permettre \u00e0 des personnes de passer d\u2019une situation de pr\u00e9carit\u00e9 \u00e0 une situation \u00a0d\u2019autonomie par la cr\u00e9ation d\u2019activit\u00e9s \u00e9conomiques.
